Imarti: also known as Jhangri or Amriti, is a popular Indian sweet dish that belongs to the traditional category of mithai (sweets). It is particularly associated with North Indian cuisine. Imarti is made from urad dal (black gram) batter, which is fermented and then deep-fried in a circular shape, resembling a flower. After frying, it is soaked in sugar syrup, imparting sweetness and a glossy appearance.

The preparation of imarti involves creating a thick, flowing batter by grinding soaked urad dal. The batter is left to ferment for a few hours to enhance its texture and taste. It is then piped or poured into a concentric circular pattern directly into hot oil for deep-frying. Once the imarti turns golden brown, it is taken out of the oil and immediately immersed in sugar syrup. The sugar syrup infuses sweetness and gives the imarti a moist and syrupy texture.

Imarti is often garnished with chopped nuts like pistachios or almonds. It is a popular sweet dish served during festivals, celebrations, and special occasions in India. The intricate design and the combination of the crispy exterior with the syrup-soaked interior make imarti a delightful and indulgent treat.
